Ingredients:
Ingredients
* 2 Zucchini's
* 1 package of pre-sliced mushrooms
* 1/2 onion
* 2-3 cloves of garlic
* 1 small jalapeno
* 1 teaspoon of cumin
* 1/2 lime
* 1/2 cup of fresh cilantro
* 1 tablespoon of olive oil
* whole wheat tortillas
Directions:

1. Pre-heat a large skillet or wok over medium heat.
2. Set oven on low temp and place 6 tortillas on a baking pan into the oven.
3. Slice the onion and mince garlic.
4. Add olive oil to the pan then add onion.
5. While the onion cooks, slice the zucchini so that you have thin round pieces.
6. Be sure you flip the tortillas and don't overcook them. You need them to be just heated thoroughly.
7. Add mushrooms and zucchini to the pan. Cook 5 minutes or until tender.
8. Squeeze in the lime juice.
9. Add garlic and cumin the last 2 minutes of cook time.
10. Add salt and pepper to taste.
11. Spoon some of the veggie mixture on a tortilla and garnish with cilantro.
12. You can always add sour cream, cheese or any of your other favorite toppings (for a less healthy version unless you are using low fat ingredients
).
