turkey, sweet potato and cranberry stew from prevention magazine Recipe

Notes:
a very tasty, easy to make stew in your crockpot that is loaded with protein
Servings: 4
Ingredients:
3 lbs skinless turkey drumsticks
1 small onion diced
1 tbsp honey
1tbsp cider vinegar
1 1/2 tsp minced ginger or 3/4 tsp ground ginger
1/2 tsp black pepper
1 tsp salt
1 cup chicken stock
1 lb sweet potatoes cut to 1 inch chunks
1/2 cup dried cranberries
2 tbsp flour
Directions:
combine turkey, onion, honey, vinegar, ginger, salt, pepper and stock in 5 quart slow cooker. cover and cook on low x 5 hrs. add potatoes and cranberries and cook until tender, about 45 min more. remove turkey and pull from bones. pour 1/4 of liquid into small pot over medium heat and add flour and whick until smooth. return mixture to crockpot and slowly whisk till smooth. return meat to slow cooker and stir, reheat if necessary and serve. yum!!!
