Tuna Muffins Recipe
Notes:
This recipe is one that I just threw together and it is casserole/quiche/omelet inspired. Use your judgment with the portions. I post it as it was requested.
Servings: 3
Ingredients:
-can of tuna drained, flaked with fork
-cooked brown rice or any cooked grain desired (I have used no grains, but I like at least a 1/4 c, usually a 1/2 c. to create some good texture)
- about a cup of finely cut veggies (I like celery, green onion, red pepper, broccoli, etc.)
- add egg whites (sometimes I add an egg) just to barely cover the rest of the ingredients
- about a T. of baking powder
- spices you like (I have used garlic, basil, dill, salt and pepper…anything you like)
Directions:
Pre- heat oven to 375ish.
Add all ingredients remembering that there is no magic right formula. Just remember what you like. May help to sift the baking powder over the ingredients as to not get little lumps, though I have never had any problems with them really
Place into sprayed muffin cups about 3/4 full.
Once nearly cooked (takes about 30 minutes), adding cheese is nice, but not necessary. Just a little is fun.
When done, let stand for a few minutes and then remove. Add a t. or so of seafood sauce and EAT. I like to add a side of green beans or a salad. Really fun and good for lunches later.
