Turkey Stir Fry Recipe

Notes:
A lovely veg packed Turkey Stir Fry  - Serves 4.

Servings: 4

Ingredients:
420g turkey steaks - sliced.
500g mixture of:-
sliced peppers
courgettes
carrots
spring onions
leeks
broccoli
Bean sprouts
Mild Chilli Powder
Soy Sauce
900g Brown Rice.

Directions:
heat 1 tbsp of oil in wok or frying pan and cook thinly sliced turkey steaks for 3-4 minutes (or until cooked) Add the 500g of mixed veg and stirfry for a extra 5-6 minutes. Add as much chilli powder as you want and 2-3 tbsp soy sauce. Serve with brown rice.

Quick Low Carb Turkey Spinach Wraps Recipe

Notes:
This is so quick & delicious!

AND this is low carb! Such a great replacement instead of eating sandwiches.

Servings: Individual

Ingredients:
Turkey lunch meat, block or sliced cheese, baby spinach leaves, mustard

Directions:
Just get a few slices of lean turkey lunchmeat, an equal number of cheese slices (I slice mine thin & narrow off a block of Colby), some fresh spinach leaves, and mustard.

Take the slice of turkey, put the narrow cheese slice in the middle, top with a few spinach leaves, and drizzle some mustard down the middle. Wrap up the sides & press down, you're done! You could put a toothpick in the middle to secure them. Have one for a snack, or several for a meal. You can add a tomato slice as well.

Tex-Mex burgers with guacamole and salsa Recipe

Notes:
A great meal to be eaten at home, but can also be served at a barbeque and picnics, with or without the salsa and guacamole.  These have proved very popular at our house and have many fewer calories than the normal version.  A serving is 2 burgers and a quarter of the salsa and guacamole. I’ve also substituted canned corn kernels for the beans, and this actually lowered the calorie count a little.

 If you omit the tortillas, you can reduce the calories even further.

Per serving: 456 calories

Servings: 4

Ingredients:
The burgers
• 400g ground turkey/turkey mince (use the best quality ground turkey/turkey mince you can find)
• 1 shallot or small onion, finely chopped
• 1 clove of garlic, peeled and very finely chopped
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• ½ teaspoon smoked paprika
• A pinch of dried chili flakes
The guacamole
• 1 avocado
• 1 clove of garlic, peeled
• 1 lime
• Salt and freshly ground black pepper
The salsa
• 4 ripe tomatoes, chopped
• ½ red onion, chopped
• 120gm (4.5oz) tin of blackeye beans
• A splash of olive oil
• Juice and zest of ½ a lime
• A handful of coriander/cilantro, roughly chopped
• ½-1 chili (depending on how hot you like your food), finely chopped
• 4 flour tortillas, low calorie/fat version if possible
• ½ iceberg lettuce, shredded
• 150gm (5.5oz) 0% fat Greek yoghurt
• 1 lime, cut into wedges
• Jalapeño peppers

Directions:
1. Mix all the burger ingredients together and make into eight patties. Set aside.
2. To make the guacamole, scoop out all the avocado flesh and put into a blender with the garlic and lime juice. Blend until smooth and season to taste.
3. To make the salsa, mix the tomato and onion with the beans, olive oil, lime juice, coriander and chili. Season and set aside.
4. Heat up a griddle pan. Cook the burgers for about five minutes on each side, turning occasionally to chargrill all over.
5. Heat up a frying pan/skillet (with no oil) and warm the tortillas through. Or do this in the microwave.
6. Serve the burgers with some shredded lettuce, a dollop of yoghurt, the guacamole and salsa, wrapped in a tortilla
7. Serve the lime and the jalapeño peppers on the side for extra flavour and heat.

Hamburger Helper, the LOWER calorie way Recipe

Notes:
This is an easy way to make healthier Hamburger Helper for your family-  a little less fattening and a little more healthy with added veggies. Makes it kinda like a chicken pot pie filling. Any kind of HH can be used probably, but I use Phili Cheese Steak flavor, or any mushrrom/beef type.

Servings: 6

Ingredients:
One box Hamburger helper -
One 2 lb pkg ground turkey (use breast meat for 100% fat free)
Optional for people who refuse to go straight turkey:
One small <1 lb pkg extra lean ground beef (4-8% fat )and 1lb turkey- mixed
8 oz canned mushrooms (or 5-10 fresh ones sliced or chopped)
1/2 chopped onion
1 cup frozen peas and carrots mix
1 C fat free milk
1 C water

Directions:
Brown (together if turkey and beef) in large skillet with mushrooms. Drain off all liquid and rinse under hot water to remove all traces of fats from meats. Continue browning -add chopped onion and carrot/peas. Brown till onions are softened. Drain any additional liquid. Rinse again if needed. Add milk and water, HALF the pasta from the HH package (or better yet replace with whole grain pasta- but still only use half the amount). Empty the package of HH seasoning in a measuring cup and eyeball to remove 1/4 of the mix. Add remaining 3/4 of the mix to skillet and mix well, throw out remaining mix.
Cover and simmer as instructed on HH package. After cooked, adding 1 small dollop of fat free sour cream on the serving on the plate is yummy and appetizing looking. Use cup measurer to serve 1 C per person. Serve with salad to fill up on.
You can use speghetti squash in place of pasta - just cook it as directed, and mix in at the very end just before serving, and reduce the liquids even more, and then no need to simmer the HH so long…maybe half the time.

Mediterranean Turkey Sandwich Recipe

Notes:
A turkey sandwich with an exotic touch.  Tasty, original & fast! Finally a sandwich with some personality =P   A delicacy of the mediterranean cusine, has strong italian influences… brought to you by me!  A delicious pesto recipe included… oh mama mia!   Translated from my language to english, for buddyslim only!  Enjoy ;-)

Servings: 2

Ingredients:
480 g (1 lb) sliced turkey (cooked as you wish)
4 wholemeal bread (hamburger style)
1 sliced white onion
3 spoons dark sugar
1 cup light cream cheese or ricotta cheese
Lettuce and tomato

For the pesto:

1 cup fresh basil leaves
half cup grated parmesan cheese
1/4 cup of olive oil
salt and pepper
Toasted & crushed pine nuts (optional)

Directions:
In a blender add the basil, parmesan cheese and olive oil, until you get a smooth paste (cream like) Add the salt, pine nuts and pepper. Set aside. Next, in a frying pan melt the sugar then add the onion. Cook it for 10 minutes until it's caramelized. In a bowl mix the cream cheese with the pesto (the blender mix I asked you to set aside previously) Now spread this mix on the bread, add in this order: some lettuce leaves, tomato, some more of the pesto if you like, the turkey slices & the caramelized onion. Bon apetit!
