Black Bean Brownies (sounds sketchy but so good!) Recipe

Notes:
Rich, fudge-like brownies that are full of protein and fiber. They’re incredibly simple to make and you won’t feel guilty licking the spoon. ;)

Servings: 20

Ingredients:
1 box of powdered brownie mix (any kind)
1 can (15 oz.) of black beans

Directions:
1. Open the can of black beans and dump all of the contents from the can into a blender or a food processor and puree.
2. Add puree to the powdered brownie mix and mix well.
3. Bake according to the brownie mix box directions.

DO NOT add the eggs, oil, or whatever else the brownie mix box may call for. You literally only mix the puree and the powdered brownie mix.

Notes:
These protein- and fiber-filled brownies are pretty rich and fudge-like. No one–not even picky kids–will be able to tell that they’re not “regular” brownies.

Servings: Makes 20

Ingredients:
1 box brownie mix
1 can (15 oz) black beans

(Seriously, that's it for ingredients!)

Directions:
Open the can of black beans, rinse well. With beans back in the can, add enough water to cover beans. Put in blender or food processor and puree. Add puree to brownie mix, and then bake according to package directions.

You DO NOT add the eggs or oil that the recipe calls for, JUST the black bean puree.

Parmesan Basil Oven Fries Recipe

Notes:
These are a great alternative to greasy fries. They’re incredibly easy (hardly even a “recipe” at all, really) and very flavorful. Many other spice/seasoning combinations work well, but the parmesan/basil combo is tasty and simple. Use less cheese to cut the fat even further, but it’s not all that high to begin with. Ingredients:
* russet potatoes
* cooking spray
* 1 teaspoon dried basil
* 1/4 cup grated Parmesan cheese
* salt and pepper to taste

Directions:
1. Preheat oven to 400 degrees. Spray a baking sheet or glass dish with nonstick spray.
2. Slice potatoes into steak-fry sized 1/4 inch strips.
3. Arrange potato strips in a single layer on the prepared baking sheet, skin sides down. Spray lightly with cooking spray, and sprinkle with basil, Parmesan cheese, salt and pepper.
4. Bake 25 minutes in the preheated oven, or until golden brown.

Blueberry Smoothie Recipe

Notes:
I took only what I had around my kitchen to make this and I am shocked at how friggin good it is! I don’t particularly like blueberries because of their texture but this is a great way to eat them without having to suffer through the mushiness of a complete blueberry. I am going to make this a lot! Don’t forget to add some soy yogurt for extra yumminess!! :)

Servings: 2

Ingredients:
1 cup fresh blueberries
2 cups ice
1/2 - 1 cup soy yogurt
1 cup soy milk
1 1/2 - 2 cups Pomegranate juice
1 teaspoon of sweetener

Directions:
Put all ingredients into blender, blend, add sweetener and enjoy!!!

Baked Potato Salad Recipe

Notes:
An entire baked potato with a huge salad on top! TASTY!

Servings: 1

Ingredients:
1 organic potato
veggies of your choice - I like, cucumber, avocado, red onion, carrots, and broccoli
I like the use of raw veggies here because you dont cook out all of the nutrients
organic olive oil
organic sea salt
pepper
vinegar (any kind, i like red wine or apple cider)
stevia powder (to sweeten if you like)

Directions:
bake your potato! (i wouldnt suggest a microwave but in a pinch it only takes like five minutes!)
in a bowl mix all your veggies
add olive oil, vinegar, a little bit of stevia, salt and pepper to taste
stir like crazy
pour over baked potato
go nuts its good for you
