Raw Asian Salad with Sesame Marinated Mushrooms Recipe

Notes:
Delicious asian salad with quick marinated mushrooms.

Servings: 1 large

Ingredients:
-Romaine Lettuce
-Tomato, cut in wedges
-Celery cut in small pieces
-Scallions julliened
-4-6 mushrooms cut into slices
-bean sprouts
-mandarin oranges
-Soy sauce (not raw) Unless you get raw soy sauce.
-Sesame oil

Directions:
Slice mushrooms and place in bowl with julliened scallions. Sprinkle with soy sauce and a little sesame oil. Toss to coat and set aside. Wash and chop salad veggies and place on dinner plate. Put marinated mushrooms and scallions on top of salad. Put bean sprouts and mandarin oranges on top and drizzle marinate onto the whole salad. Delicious and satisfying.

Raw sweet potato chips Recipe

Notes:
Yes!  An ‘I Cant Believe it’s a Raw Sweet Potato Chip’ Chip! 

Servings: 2-3

Ingredients:
1 Medium Sweet Potato
1 Tb vegetable oil
coarse sea salt
optional-onion/garlic powder, cayenne pepper, chipotle seasoning…

*Dehydrator required*

Directions:
Peel and slice sweet potato into thin strips with a mandolin slicer, a twisty slicer or a big veggie peeler. Place slices into bowl and sprinkle oil on them. Toss slices to coat. Sprinkle desired seasonings on slices and toss again. Place slices in single layer on dehydrator trays. (one potato will fill several trays) again with salt and seasonings again if desired. (careful of sodium) Dehydrate at 125 degrees for 8-10 hours (depending on thickness of slices) When done slices should be crisp and yummy. Enjoy! If slices are not crisp dehydrate longer, if they are 'hard' the slices may be too thick. If they curl up they may be too thin.

Raw corn guacamole Recipe

Notes:
Yummy raw corn guacamole/fish taco

Servings: 1 large

Ingredients:
1 ripe avocado

1 ear raw corn

1 fresh tomato

1tsp cilantro

1TB chopped jalapeno

small amount of minced onions

juice of 1/2 lemon

For Fish Taco with fresh Guacamole

Filet of white fish (skinless)

lemon

seasonings such as pepper, dill or chipotle (watch sodium content!)

whole wheat tortilla

tomatoes

lettuce

guacamole (above)

low fat sour cream (optional)

Directions:
Using sharp knife cut avocado in half. Hold half with seed in left hand, carefully strike seed of avocado with sharp knife so knife slightly sticks into avocado seed and twist to remove seed. Scoop out avocado flesh into bowl and mash with fork. Dice tomato and cut raw corn from cob, add to bowl. Add all other ingredients and fold all in together. Serve with celery sticks, or a SMALL amount of tortilla chips. Or fish taco as below…

Season and grill fish (3-5 minutes per side on hot grill) Heat up tortilla on grill for 10 seconds or so (until soft) Assemble ingredients on tortilla and fold. Wicked yummy way to break up a raw diet!

Sunrise Delight-juicer recipe Recipe

Notes:
A quick, refreshing drink.  It is a staple of my juice fast.  It is easy to make and a joy to drink.  I use a juicer and Magic Bullet to prepare this drink.  You can always try this with a blender but it won’t be as smooth.  My juicer makes the juice taste so much better than I thought possible.

Servings: 1

Ingredients:
Half of one banana
1 peach or nectarine: fresh or frozen; organic if you choose
1 navel orange
4 strawberries: fresh or frozen; organic if you choose
Ice cubes: 4-8 depending on your preference

Directions:
Peach/Nectarine:
Clean, cut in half and remove pit. Cut to fit according to your machine's instructions.

Orange:
Peel and make sure to remove the pith (white stuff) and hard ends.

Juice:
Peach/Nectarine and Orange according to your machine's instructions.

Banana:
Peel and cut one HALF.

Strawberries:
If fresh: clean, remove tops and cut according to your machine's instructions.
If frozen: take straight from freezer.

Blend:
Peach/Nectarine and Orange Juice
Strawberries
Banana
Ice Cubes

Blend until everything is to the consistency you desire. I blend in my Magic Bullet until everything is smooth. My son likes to have small chunks of banana and strawberry. Add additional ice if you want to make a thicker smoothie.

Raw Mushroom Soup Recipe

Notes:
This raw, vegan soup has a very savory, earthy feel. It’s very good for you, too.

Servings: 1

Ingredients:
3 raw mushrooms (rinsed)

as many walnuts as desired

a small piece of ginger root

1/2 C of water
Optional: A sprinkle of thyme and table salt

Directions:
Thoroughly blend in a food processor
