Quick Low Carb Turkey Spinach Wraps Recipe

Tuesday, June 30th, 2009

Notes:
This is so quick & delicious!

AND this is low carb! Such a great replacement instead of eating sandwiches.

Servings: Individual

Ingredients:
Turkey lunch meat, block or sliced cheese, baby spinach leaves, mustard

Directions:
Just get a few slices of lean turkey lunchmeat, an equal number of cheese slices (I slice mine thin & narrow off a block of Colby), some fresh spinach leaves, and mustard.

Take the slice of turkey, put the narrow cheese slice in the middle, top with a few spinach leaves, and drizzle some mustard down the middle. Wrap up the sides & press down, you're done! You could put a toothpick in the middle to secure them. Have one for a snack, or several for a meal. You can add a tomato slice as well.

Yummy!

mango-mint salmon wraps Recipe

Friday, January 2nd, 2009

Notes:
These are rice wraps that I love to make and eat. I’m pretty good at guessing calories, and I’d guess that they’re about 200 calories per wrap. You can always try other things in them, I LOVE the rice wraps because you just have to soak them in a bit of water to use them and they have way less calories and carbs then a tortilla wrap. They’re a great idea for lunches, too!

This recipe is for two wraps. But you can always make more and keep them in the fridge for later!

Servings: 1 or 2

Ingredients:
-1 small salmon fillet
-hoysin sauce
-10 fresh mint leaves
-A few leaves of romaine lettuce
-1/4 of a mango, sliced

Directions:
Bake the salmon at 350 degrees until it's cooked (about 15-20 min). Soak the rice wraps in water, until they're soft.
Take the wraps one at a time and add 1/2 the salmon fillet to each wrap, some hoysin sauce, the mint, the mango slices and the lettuce.
fold the two outter edges in, and then roll from the bottom. Enjoy!

1 cup Orange Juice (120 calories or less), 1 cup frozen strawberries whole (unsweetened), 2 Tbsp Splenda(or any No-calorie sweetner)(optional)
