Chocolate Ricotta

Two 1/4-cup servingsThis high-calcium “pudding” has the benefits of cocoa and cinnamon - and the flavor of Mexico. Experiment with different brands of ricotta - they have different textures and flavors.

Prep time: 10 minutes

Ingredients:
1/2 cup lowfat ricotta cheese
2 tbsp mild honey
2 tbsp cocoa powder
1/2 tsp vanilla
1/2 tsp ground cinnamon

Instructions:
1. Combine all the ingredients in a food processor and process until smooth.
2. Scoop into small dessert dishes and serve.

Slimmer’s Flummery Recipe

You can also add fruit to this once it is all mixed together. 

You can also make a diet jelly/jello as a base and top it with this mixture - looks great in individual sundae dishes.

Servings: 4-6

Ingredients:
1 sugar free/diet jelly/jello
quarter to a third of a 400ml tin (12-14oz can) of non fat/light evaporated milk

Directions:

Make a diet jelly/jello according to directions. Put it in a large bowl.
Refrigerate a 400gm (12 oz) tin/can of non-fat or light evaporated milk
When the jelly is partly set, (thick but still will run off a spoon), whip it up until it is about two-three times the volume, about 3-5 minutes.
In a separate bowl, pour in about a quarter to a third of the evaporated milk. Beat this up until it it is the consistency of whipped cream. You can use all the evaporated milk for more volume and a creamier dessert, but this adds calories.
Pour this into the jelly/jelly and mix together.
Put into the refrigerator to set.
It is as light as a feather, so not a lot of substance, but tastes delicious, and okay even if you end up eating the whole bowl yourself.

Variations:

You can also add fruit to this. I made a raspberry jelly/jello and dropped in some fresh raspberries just before I put it back in the refrigerator - yum yum.

You can also make a diet jelly/jello as a base and top it with this mixture.
