Chocolate Chip Pumpkin Muffins Recipe

These are so darn easy to make & taste so yummy. I love to make people think I have some sort of baking talent (which I don’t) when I take them somewhere. Admittedly, they are kinda high in sugar, but are a great lo-cal way to satisfy your sweet tooth without blowing it.. and you can totally justify it because of all the vitamins & fiber in the pumpkin! Are great sans the chocolate chips, too.. if you want to cut out more calories. One warning.. my downfall has been eating too much of the batter while in prep, so just don’t do it!
Servings: 35 (mini)
Ingredients:
One large can of pumpkin
One box of spice cake mix
Optional: Mini chocolate chips (more or less as preferred)
P.s. You will need a mini muffin tin (you don't HAVE to, but that helps keep them low cal & they just taste better smaller)
Directions:
Preheat oven to 350 degrees. Spray muffin tins with no-stick spray. Mix all ingredients together. Fill tins with mix & bake for 12-15 minutes.
