Low/No Carb Pizza Recipe

Thursday, May 1st, 2008

Notes:
It’s really the SIMPLEST thing, but I never thought of it up until a few weeks ago, lol~ :)

Prep. time depends on what you put on it, and if you have to make that, too. So I just put the time it usually takes me. :)

Oh~ also, you could use as little or as much as you desire~ I usually just make it for myself… okay enough rambling.

Servings: 1

Ingredients:
Shredded Cheese~ (of your choice, I use Montary Jack & Cheddar, sometimes Mozzarella too.)
Cut up Meat~ (I preferably use Bacon and Pepperoni.)
Dressing~ I use Bleu Cheese dressing, which literally has NOTHING in it (no sugar and no carbs) all though a Ranch would probably be yummy with this too.

Directions:
I usually microwave this as a quick thing~ but I'm sure in the oven it would be yummy too. :)

Put half-most of the cheese on a dish (or oven safe pan) add some of the meat~ more cheese, the rest of the meat, and then the rest of the cheese.

Microwave (or bake) for about 2 minutes~ depending on your microwave abilities, mine is old so it takes 4 minutes, lol…

Take it out and let it set for a few minutes (so it's not the consistancy of something soup-like)

Cut it up and dunk in your dressing. ;D

Egg Bake Recipe

Saturday, March 29th, 2008

Notes:
This is a recipe I got at my nutritionist a couple years ago and makes for a great and easy breakfast that I can stick to actually eating without a whole lot of time in the morning. I freeze each serving in a tupperware and then can toss one in the microwave in the morning when I am getting ready. It is better fresh but I can’t eat a whole pan of egg bake in a week!

Servings: 11

Ingredients:
Use organic whenever possible:
Butter, olive oil, or coconut oil (coconut oil withstands high heat better than olive oil)
12 eggs
2 cups heavy whipping cream (this is good fat)
1 package spinach (fresh or frozen, I like fresh, less watery)
1- 16oz package hash browns (I like Cascadian Farms)
Turkey sausage (I use Jenny-O Turkey links, but use whatever)
Misc veggies (zucchini, onions, mushrooms, etc. if desired)
1/2 cup shredded cheese (if desired)

Directions:
Preheat oven to 350 degrees. Grease a 9×13 inch pan with butter, olive oil or coconut oil. Whisk eggs and cream in separate bowl. Spread hash browns on bottom of pan. Spread spinach then sausage and any veggies over hash browns. Pour egg mixture over sausage. Bake 45-55 minutes or until egg is cooked through. Sprinkle cheese over top for last 5 minutes.

scrambled omelet? Recipe

Wednesday, February 27th, 2008

Notes:
i just threw this together earlier…and its yummy …really ..you should try it….even my almost 3 year old likes it!

Servings: 1

Ingredients:
fresh spinach, eggs, cheese (or not?), tofu (cut into small pieces),

Directions:
saute the tofu with whatever you like…mine had no seasoning so i sauted in a bit of soy and italian dressing…(you can use whatever you like) then you add the scrambled raw eggs to the pan, after the eggs are half way cooked you add the fresh spinach (as much as you would like but, i thought that i added alot but, after it cooks it really really shrinks! so add a little more than you think) then you can add some shredded sharp cheddar or whatever kind of cheese you prefer if you would like…..
if you are not used to eating foods like this you may be afraid or hesitant …but, i urge you to try it…or make up your own recipe…this is high in protein, and iron..and im sure it has other good things like calcium..etc…try it.

Servings: 9

Ingredients:
1 (20oz) bag of Simply Potatoes Shredded Southwest Flavor
1 c. ff cheddar cheese
1.2 c. egg substitute
1.2 c. ff milk
salt and pepper to taste

Directions:
Preheat oven to 425 degrees. Press potatoes into bottom of an 8in. square dish. Bake for 25 mintues or until heated through (I like my potatoes toasty!)Spinkle cheese over potatoes. Combine the egg and milk and salt and pepper. Pour over cheese and potatoes. Reduce oven temp to 350 and bake for 25 mintues or until brown and set!
This says it serves 4 but I make smaller squares of 9. Calculate the points accordingly!

Baked Stuffed Mushrooms with Sausage and Mozzarella Recipe

Tuesday, March 6th, 2007

Notes:
These savory melt-in-your-mouth morsels are irresistible

Servings: 12-24

Ingredients:
1 pound (about 24) large fresh white mushrooms, cleaned
2 tablespoons olive oil, divided
6 ounces bulk Italian sausage
3 green onions, sliced (about 1/2 cup)
1 teaspoon chopped garlic
1/2 teaspoon Italian seasoning
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated

Directions:
Preheat oven to 400F. Remove stems from mushrooms; finely chop enough stems to equal 1/2 cup and reserve. Place mushroom caps in a bowl and toss with 1 tablespoon oil. Arrange caps cavity side up on a shallow baking pan and set aside.
Heat remaining oil in a medium skillet over high heat. Add sausage, green onion, garlic, Italian seasoning and reserved chopped mushroom stems. Saut, breaking up sausage into smaller pieces, for about 5 minutes, until cooked through and nicely browned. Remove from heat; add both cheeses and stir just until cheese melts.
Stuff mushroom caps with sausage mixture and bake 10 to 15 minutes, until mushrooms are tender and cheese is slightly golden.
