I TAKE 1 OR 2 TURKEY SAUSAGE PATTIES, CHOP UP IN SMALL PIECES,

ADD TO NON STICK FRYING PAN SPRAY W/ SMART BALANCE COOKING SPRAY

COOK TILL BROWN, ADD ALITTLE RED OR GREEN BELL PEPPERS CHOPPED SMALL

COOK TILL TRANSLUSENT, I ALSO ADD ALITTLE SAUTEED ONIONS, (OPITONAL)

ADD EGGBEATERS W/CRUSHED RED PEPPERS (OPTIONAL) THEN SCRAMBLE, DONT OVERCOOK

Directions:

Swiss and Walnut Pears Recipe

Notes:
Soft spreadable swiss cheese mixed with warmed glazed walnuts used as a topping for pears. This makes a very hearty breakfast that left me satisfied for hours after eating it.  

Makes about 20 pieces. Each piece is 23 calories.

Servings: 2

Ingredients:
1/3 cup walnuts, chopped (I used Emerald glazed walnuts since that is what I had on hand.)
3 wedges of Laughing Cow Light Spreadable Swiss Cheese
1 bartlett or bosc pear, sliced

Directions:
Heat the walnuts up in a skillet over medium high heat for 3 minutes. Meanwhile, combine the 3 cheese wedges and add the toasted walnuts mixing the mixture together. Top the pears with the cheese mix. Enjoy!

Yummy Egg Beaters Recipe

Notes:
So I have recently started eating egg beaters instead of regular eggs, and I was wondering what I could put on them to make them a little more interesting to me. And I thought how about some salsa?? And since salsa is really low in calories I tried it, and it was great. Now me personally I like green salsa. Hope you enjoy!!!

Ingredients:
Egg Beaters, green salsa. I have tried many different brands and off brands of green salsa, and I like them all.

Directions:
Cook Egg Beaters in a pan, when done add salsa on top

my version of a breakfast shake :D Recipe

Notes:
my mom used to make this for me when i was a kid in school and she was working so she didn’t have time to make us breakfast sometimes. this is what she would give us instead. it’s easy to make and good for you.  its a banana shake of sorts and delicious. hope you like i t.:D

Servings: 1 serving

Ingredients:
1 whole banana (peeled)
1 raw egg (small,medium ,or large its up to you.any of these works)
1 cup of milk (any milk, but to be healthy use 1% or fat free)
1 blender
or by hand you're gonna need a fork
note:if you want to you can also add some sort of powder chocolate/strawberry mix to this. if you can find a healthy one.

Directions:
blender: put the banana in your blender followed by the egg and last the milk. then press liquify!! let it run until the banana is gone and there aren't any chunks in the shake. turn off blender, pour in a cup and drink up.
by hand: first take the banana and put it in a cup. you are gonna take a fork and start mashing up the banana. mix it all up and break it down until it becomes creamy. (shouldn't take long) then you break your egg in the mixture and mix it up again into the banana. after the egg and banana are well combined pour in the milk and repeat the mix step. pour in a cup and enjoy!:D

Southwest Breakfast Burrito Recipe

Breakfast Burrito with black beans and salsa.

Ingredients:
3 egg whites
1 small low-fat whole-wheat tortilla
1 whole egg
1/4 cup black beans
2 tbsp salsa

Directions:
Scramble the egg whites and whole egg in a non-stick skillet. Add beans and salsa and mix. Pile onto warmed tortilla and enjoy!

antioxidant smoothie Recipe

Notes:
this may not sound great, but try it.  I guarantee, you will love it.  My kids drink this, and their friends do too.  This is packed with beta carotene, vitamin a and c, omega 3, and fills the fruit and veggie quota. very filling, and GREAT energy booster before a workout. this is all I have each morning.

You will need a blender.  Add the ingredients to the blender in order slowly while set to ’blend’.  after adding the ice at the end, set to liquify for about 15-20 seconds!  this drink has alot of carbs, so you may need to reduce the fruit content, depending on your situation.

1 cup of apple or orange juice (to cut carb coount, reduce to half juice, half water)

2 handfulls of washed raw spinach

8 small baby carrots

1 tbsp whole flax seed (omega 3)

5 medium strawberries

4 medium radishes

2 bananas (can eliminate 1 banana to cut calories, but great source of potasium)

1 tbsp honey (natural antibiotic) I hate artificial sweeteners. honey has great health benefits

1 cup ice cubes

Makes 3-8oz servings.  can be stored in fridge for up to 24 hours.

optional add ins-blueberries (great antioxidant properties)

sweet vidalia onion (contains quercitin, natural anti inflammatory)

lowfat yogurt or soy milk to make it more creamy, and freeze to make frozen treat.

or add water to make it thinner!

experiment, and have fun…just don’t add garlic…thought i could sneak it in…huge mistake! couldn’t get near people for a week.

Mock French Toast Recipe

Notes:
when you want to watch your carb intake but still have great flavour!

Servings: 1

Ingredients:
-eggs
-milk
-sugar substitute (optional)
-cinnamon
-vanilla

Directions:
Mix in a bowl - eggs and milk, then add in 1 tsp vanilla, a pinch or two of cinnamon and sugar substitute (optional)

This mixture will be like french toast but without the bread, just pour mixture into heated pan and make like an omlette.

You can put jam, or SF syrup or maple syrup on top as you would with normal french toast!

Asiago Cheese, Spinach, Basil and Sundried Tomato Fritatta

Notes:
This is a fritatta recipe I got from a health website. I do not recall the website but these are absolutely delicious and easy to make! And very good for you. On the website they boasted that a breakfast higher in calories and protein would actually lower your calorie intake for the remainder of the day! I tested it and it DOES WORK! This is supposed to be eaten with one slice of toast and a half cup berries. It feels like a big breakfast and it really does make you not so hungry all day long! The recipe said it was 250 calories for this, but I use a cupcake pan which cut the suggested serving size down quite a bit (they said it was 4 servings but I got six) - so I added the whole breakfast up (toast and berries) and it runs around 350 calories. Feel free to replace things to cut the calories if need be!

Servings: 4-6

Ingredients:
Basil
Spinach
Eggs
Shredded Asiago Cheese
Onion or Scallop (scallop is recommended because it isn't as strong)
Sun Dried Tomatoes
Salt

Directions:
Cook in a pan on medium or medium high 1 small Scallop until soft but not brown then add 1 Cup packed spinach (I use olive oil cooking spray) until it's soft
This should only take about 5 minutes.

Take pan off of stove and set aside (if it's still cooking make sure and throw it in to a bowl until you need it - don't want it to over cook)
Beat 4 egg whites and 4 whole eggs in a separate bowl
Finely chop 1/4 cup basil and throw into the egg mixture
Chop 1/4 cup Sundried Tomatoes and throw in to the egg mixture
throw in 1/2 tsp. salt & pinch of pepper
Throw in 1/2 Cup shredded Asiago cheese into the egg mixture, along with your spinach and scallop.
(Feel free to add garlic if you like!)

Spoon mixture into cupcake pan or baking dishes (the site said it made only 4 but I got 6 out of this using the cupcake pan instead. If you use the larger baking dishes make sure to note that this breakfast will be higher in calories…duh…I know :) )

Cook for approximately 10-14 minutes at 250 degrees until the middle is firm (no juicy centers!)

I premade these for the entire week once and it actually wasn't bad…some of my friends grossed out at the idea but it kept me on track breakfast wise!

Ambrosia Spread Recipe

Cream cheese filled with fruit and other goodies!

75 calories a serving in a tablespoon!

Servings: 1 2/3 cups

Ingredients:
mandarin oranges
pineapple tidbits
toasted flaked coconut
chopped and toasted slivered almonds
8 oz container of soft cream cheese

Directions:
Mix the ingredients together and smear a nice helping on top of a slice of toasted nut bread!

Yummy breakfast for when your busy or a great way to make sure your eating enough fruit. You can change the fruit to eat what’s in season as well.

Ingredients:
1/2 cup frozen Strawberries
1 sm banana
2/3 cup pineapple juice
1/2 cup ice
2 Tbsp plain yogourt (Low Fat)
1 Tsp Honey

Directions:
Put it all in the blender, blend till smooth and enjoy. 5 pts
