Spinach and Tomato Chicken Breast with prepared Risotto Recipe

Servings: 2
Ingredients:
Raw Spinach - 3 -5 cups
Onion - 1 medium sized
Tomato - 1 medium sized
Margerine or Oil
Chicken Breast (2)
Parmesan Cheese
Box of Risotto
Directions:
Sautee onion in 2 tsp of margerine or oil, when onions start to become transparent add thawed chicken breast and chopped tomato. Let simmer for about 5 minutes, then add the spinach and any seasonings you like, such as pepper or garlic (I added chicken seasoning). When the chicken is half cooked and covered in seasonings, remove from pan and place in the oven, baking for about 5 - 10 minutes (until desired and cook thoroughly). Remove mix of onion, tomato and spinach and place aside. Cook risotto to package directions. When cooked, place chicken alongside risotto on your plate with the cooked vegetable mix on top of both the chicken and the risotto, and sprinkle as desired with parmesan cheese.
