i just threw this together earlier…and its yummy …really ..you should try it….even my almost 3 year old likes it!

Ingredients:
fresh spinach, eggs, cheese (or not?), tofu (cut into small pieces),
Directions:
saute the tofu with whatever you like…mine had no seasoning so i sauted in a bit of soy and italian dressing…(you can use whatever you like) then you add the scrambled raw eggs to the pan, after the eggs are half way cooked you add the fresh spinach (as much as you would like but, i thought that i added alot but, after it cooks it really really shrinks! so add a little more than you think) then you can add some shredded sharp cheddar or whatever kind of cheese you prefer if you would like…..
if you are not used to eating foods like this you may be afraid or hesitant …but, i urge you to try it…or make up your own recipe…this is high in protein, and iron..and im sure it has other good things like calcium..etc…try it.

I think it’s important to enjoy preparing your food just as much as eating it. But still, I like to cut up the onion and green pepper in advance and store what I will use for the week in an airtight container in the fridge. This meal is delicious and good for you too, eat if for any meal time, not just for breakfast!
Servings: 1
Ingredients:
1/2 cup egg substitute or egg whites
1/4 cup diced white onion and green bell pepper mixed together
1/4 cup clean sliced mushrooms
1 slice low fat ham torn into pieces
1 slice Kraft American cheese (you can of course substitute low fat cheese in its place, but be sure to use 1 serving only)
1 slice of bread, lightly toasted
Directions:
Coat a small frying pan with a no calorie cooking spray. Preheat the pan just til hot. Sprinkle in the onion, green pepper, mushrooms and ham pieces. Sautee until golden brown (mmm doesn't that smell wonderful?) and then add the 1/2 cup of egg substitute. Scramble all ingredients together by scraping the bottom and sides of the pan with a wooden spoon or spatula until done. Remove from heat and place the cheese slice over top of the egg mixture. Let it melt while toasting your bread. Don't put butter or anything on the toast, it is quite tasty just by itself when eating with this scrambled omelet!

I want to edit this, but it won’t let me.
I wanted to say that I make it different now. I don’t use the toast any more and I replaced the cheese with 1 TBSP of parmesan.
Oh! And I eat it with a pre-packaged cup of diced pineapple on the side.
