Roasted Veggies Recipe
Notes:
Great for SOBE diets
Servings: 4
Ingredients:
1 md zuchini - cut into bite size pieces
1 md summer squash - cut into bite size pieces
1 md red bell pepper - cut into bite size pieces
1 md yellow pepper - cut into slices
1lb fresh asparagus
1 red onion
3 TBSP extra virgin olive oil
1 TBSP salt
1/2 tsp pepper
Directions:
Heat oven to 450 degrees. Place veggies in roasting pan - Toss with olive oil, salt and pepper. Spread in single layer in pan. Roast 30mins - stirring occasionaly until lightly browned and veggies are tender
