Orange Chinese Chicken Recipe

If you like this at the Chinese restaurant, you’ll love this version that cuts the guilt in half.
Servings: 4
Ingredients:
2 tsp dark sesame oil
1 lb. boneless, skinless chicken breast(s), four 4 oz. pieces
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
15 oz. Del Monte Mandarin Oranges in Light syrup (or similar kind)
1/2 cup reduced-sodium, fat-free chicken broth
1 TBSP low-sodium soy sauce
2 tsp cornstarch
Directions:
In a large, nonstick skillet heat the sesame oil over medium-high heat. Using the salt & pepper, season both sides of the chicken. Put chicken in the skillet until chicken is golden, turning once.
Drain the oranges, but keep 1/4 cup of the liquid from the can. Add the oranges and that saved liquid to the pan, simmering for 2 minutes. Whisk the broth, soy sauce & cornstarch in a small bowl. Add this to the pan and simmer until thickening occurs & the chicken is cooked thoroughly.
You will end up with 1 piece of chicken and approximately 1/4 cup of sauce for each person. (5 points/serving)
