One-pan chicken thighs with roasted veg Recipe

Per serving: 227 calories
12g fat.
Servings: 4 people
Ingredients:
1 large fennel bulb, sliced thickly
2 red peppers, cut into large chunks
300g (10 0z) waxy new potatoes, sliced thickly
2 large leeks, halved lengthways and cut into chunks
4 to 6 large chicken thighs, bone skin and thigh left on
2tbsp extra virgin olive oil
Directions:
Heat the oven to 180*c /160*c/ fan/350*F/gas 4. Toss the veg and the chicken in the oil and season well. Place the veg in to the bottom of a roasting tin with the chicken on top. Roast for 45 mins until the chicken skins are golden and crispy and the veg is soft and beginning to caramelise.
Divide between four plates and serve immediately.
