Oatmeal Muffins

Chill time: 6 hours
Cooking time: 15 minutes

Ingredients
1 cup regular oats
2 cups low-fat buttermilk
1 2/3 cups whole wheat flour
2/3 cup packed light brown sugar
2 tablespoons canola oil
1 teaspoon baking powder
1 teaspoon baking soda
4 large egg whites, lightly beaten
½ cup chopped nuts
Cooking spray

Directions:
Cooking Instructions
1. In a medium bowl combine the oats and buttermilk. Cover and refrigerate overnight or at least 6 hours.
2. The next morning preheat the oven to 350°.
3. Add everything but the nuts to the bowl mix until smooth. Fold in the nuts.
4. Spoon the muffin batter into each cup coated with cooking spray or a muffin liner.
5. Bake for 15 minutes or until muffins spring back when touched lightly in center.
6. Remove muffins from pans immediately and serve.
7. Store leftover muffins in the refrigerator and reheat before serving.
