Notes:
Got this off the Biggest Loser, very lowcal and easy, and tastes great!

Servings: 4

Ingredients:
1 half cup chopped onion or scallions
1 cup chopped tomato
Plenty of chopped fresh parsley( didn't have fresh so I used dehydrated and it worked fine)
4 tilapia fillets

Directions:
Place tilapia fillets on broiler pan and broil for 5 minutes on each side.
While fish cooks, coat frying pan with a spray of Pam(I used olive oil flavored).
Saute onions tomatoes and parsley until onions are tender( I also added garlic, salt and pepper and lemon juice, and squeezed lemon juice over the fish before broiling)
Top fish with tomato mixture and serve

This looks awesome, and would add an additional veggie, if you added sliced yellow and green zuchini squash in the tomatoe mixture too!
I am going to try it tonight! YUM!
