Fake French Toast Recipe

Notes:
Very good and quick recipe for the french toast lovers who, however, is dedicated to eating the low carb lifestyle!

Servings: 1

Ingredients:
1 egg
2 T. ricotta or cream cheese
1 tsp. vanilla extract
1 pkt. of splenda
dash of cinnamon
dash of nutmeg

Directions:
Mix all ingredients in a bowl. Whisk ingredients until well blended. Pour into a heated, greased skillet and cook. Flip and cook other side. Serve with butter.

      I finally tried this recipe this morning. I am pre-diabetic so NOT using bread caught my eye. I was leary because really? How good could french toast be not using bread. Okay…I give this a 10. It tasted like french toast and if I get some sugar free syrup it will be more like french toast. It’s easier than french toast because no dipping and you just pour like pancakes. Some people might think I’m crazy. But when your on a lifestyle change and serious about it you need to learn to like the alternatives and not fight it. Of course it’s not true french toast but this is going into my recipe book of favs and I WILL be serving this to the family. Thanks so much for sharing!
