Cool Whip & Jello Pie Recipe

An adaption on a recipe I found here the other day. This is virtually the same thing but the Jell-O Mix helps to thicken it up a bit and give it a little more form.
Servings: 8
Ingredients:
2 tubs of lite cool whip (or sugar free)
1 pack of Jell-O Mix (sugar free or regular) flavor of your choice (I choose strawberry)
1 low fat pie crust
fresh fruit of your choice (Again I pick strawberries)
Directions:
Take 1 of the cool whip tubs and put it in a mixing bowl, take 1/2 to 3/4 of the second cool whip tub and put that in the bowl as well. You will use the other 1/4 of the cool whip later.
Take the Jell-O Mix packet and add some in and mix. Keep adding for the taste. I typically use almost the entire pack but it varies. After that is mixed up, cut some of the fruit, in my case it is strawberries and add that to the mix as well. Get it all mixed in, add more Jell-O mix if desired.
Scoop the mix into the pie crust so that it fills the pie evenly. Take the remaining 1/4 plain cool whip and add it on top. Take the rest of your fruit, cut them up in halves (or however you'd like) and add it on top.
If you regridgerate for at least 30 minutes it gives the pie more stability when you serve. Although it's ready to eat right away.
Looking at the different ingredients it will vary as to the calories and fat content, but overall with sugar-free / fat-free Jell-O and lite cool whip in the low fat pie crust, it's very low in calories.
