Colorful rice topped with baked chicken breast Recipe

Tonight when I couldn’t figure out what to make for dinner….well, I figured something out lol
I don’t really like rice honestly, but I needed something to replace potatoes (I love potatoes).
There are no actual measurments for this either…
Servings: NA
Ingredients:
Chicken Breast
Garlic Powder
Parsley Flakes
Crushed Pepper
White Rice or Brown Rice
Beef Stock
Brocolli
Green Onions
Grated Carrot
Directions:
First I put my seasonings for the chicken, in a small bowl and mixed just the seasonings together.
Then I coated each chicken breast in the seasoning, after that I then put them in the oven.
While those were quickly cooking away I put some rice (enough for me and my boyfriend) in a pot, using part water and part beef stock as the liquids.
Letting the rice cook half way through, I then put in my brocolli, green onions and grated carrot in with the rice, put a lid on and let it cook the rest of the way through.
By that time, the chicken was done. I cut the chicken into long strips and placed on top of the cooked rice
So delish!
