Cinnamon Honey Granola Bars Recipe

These granola bars are so yummy and addictive! They are easy and fun to do on a day when you have an extra hour of free time. They store easily and are such a perfect thing to grab in the middle of the day. The mix of honey and molasses gives them such a deep nutty flavor, and the cinnamon adds a bit of sweetness to them. You can make these personal by adding in nuts, dried fruit, chocolate chips, anything will work with them. FYI, they are only 3 weight watchers points.

Ingredients:
6 C old fashioned rolled oats
4 Tbsp margarine, melted
1/4 C vegetable oil
1 C brown sugar
1/2 C honey
1/4 C molasses
3 tsp vanilla
1 1/2 C puffed rice cereal
1 1/2 tsp cinnamon
Directions:
Preheat oven to 350.
In a large bowl mix the oats, margarine, and vegetable oil together until oats are well coated.
Divide the oats onto two baking sheets in an even layer and bake for 15-20 minutes, shaking the pan at least twice during baking.
While oats are toasting, in a medium sauce pan melt sugar, molasses, and honey until sugar is dissolved, add vanilla.
When oats are done, put them back in a bowl when cool enough to handle.
Mix in the cinnamon, and rice cereal.
Stir in the sugar syrup. Be careful because this will be hot! Let this cool for no more than 5 minutes.
Lower the oven to 325.
Line one baking sheet with aluminum foil.
Grease the foil.
Dump the oats onto the sheet.
Oil your hands (important step) and firmly press the oats into the pan until it is even.
It should be about 3/4-1 inch thick.
Bake for 20-25 minutes.
Remove from oven and cool completely.
Cut into rectangles and store into an air tight container, or ziplock bag.
Will keep for little more than a week.
