Cilantro-Rubbed Grilled Salmon Recipe

Servings: 4
Ingredients:
2 cups cilantro leaves, minced
½ cup basil leaves, minced
1 small clove garlic, minced
1 small jalapeno, minced (seeds removed)
1 tablespoon freshly squeezed lemon juice
1 tablespoon honey or agave nectar
½ cup olive oil
four 6-ounce salmon fillets, skin on (or off if you prefer)
salt and freshly ground black pepper
Directions:
1. In a bowl, mix together cilantro, basil, garlic, jalapeno, lemon juice, honey and olive oil. Rub mixture evenly and generously over entire surface of each salmon fillet. Place filets on a non-reactive plate and rub any remaining cilantro mixture over top. Refrigerate for 1 or 2 hours.
2. Preheat the grill on medium-high. Sprinkle salmon fillets generously on all sides with salt and black pepper. Place on hot grill, skin side down (even if there’s no skin). Lower lid of grill, allowing the heat that builds up under the closed lid to cook the top of the salmon. Grill until skin side is fairly well charred and salmon is barely cooked through. If necessary, flip salmon and grill the top side for a minute or two. Serve immediately with your favorite side dishes.
