Easy Grab and go breakfast pita Recipe

Notes:
Turkey bacon and egg pita sanwich

Ingredients:
2 slices turkey bacon
1 egg
whole wheat pita pocket
cheese (optional)
FF Miracle whip

Directions:
fry 2 slices turkey bacon (i pre cook mine and nuke it for 30 seconds when i need it quick)
crumble bacon, and set aside
scramble 2 egg (microwave is quickest)
mix scrambled egg with 1 teaspoon ff miracle whip, add bacon and fill your pita. and run out the door before you are late to work. you can add 2 teaspoons shredded cheddar for 1 additional point. 3 points value

Dark Chocolate Bundt Cake Recipe

Very moist chocolate cake.

Servings: 14

Ingredients:
2 cups all purpose flour
1 1/3 cups sugar
1 ½ teaspoon baking soda
2/3 cups unsweetened cocoa
½ cup regular butter, melted
1 ½ cups hot water
1 teaspoon vanilla extract
1 cup sauerkraut, pureed until smooth
1 teaspoon unsweetened cocoa

Directions:
Preheat over to 350 degrees. Coat Bundt pan with cooking spray.
In large mixing bowl, combine flour, sugar, baking soda and 2/3 c. cocoa. Add melted butter, hot water and vanilla, mix well. Add sauerkraut and blend thoroughly.
Pour batter into prepared pan. Bake about 55 to 60 minutes. Cool cake in pan for about 20 minutes and then turn out onto a baking rack and cool completely. Sprinkle with 1 teaspoon cocoa powder before slicing. Slice into 14 pieces.

Chicken Tortilla Soup Recipe

Ingredients:
2 Tablespoons olive oil
1 large onion, chopped
2 medium carrots, finely chopped
2 Tablespoons minced garlic
3 cups low sodium chicken broth
14 ounce can diced tomatoes, undrained
1 cup mild picante sauce
15 ounce can black beans, rinsed and drained
1 cup frozen whole kernel corn
1 teaspoon ground cumin
½ teaspoon black pepper
½ teaspoon dried oregano leaves
½ teaspoon chili powder
1/8 teaspoon paprika
2 cups chopped cooked skinless chicken breast
¼ cup chopped cilantro

Optional: Tortilla chips, sliced avocado, shredded cheddar cheese and sour cream.

Directions:
Heat oil in a large pan over medium heat. Add onion, carrots and garlic. Cook until onion is tender, about 6 minutes.
Increase heat to high and add broth, tomatoes, picante sauce, beans, corn and spices. Bring to a boil. Reduce heat, cover and simmer 30 minutes. Add chicken and cilantro. Cook until thoroughly heated.
Ladle into bowls and serve with optional sides if desired.

Ingredients:
2 cups fat-free chicken broth
1 cup water
2 teaspoons taco seasoning
¼ teaspoon dried minced garlic
1 teaspoon dried parsley flakes
1 cup frozen whole kernel corn
¼ cup chopped red bell pepper
¼ cup chopped green bell pepper
½ cup chopped onion
1 cup diced cooked chicken breast (5 ounces)
6 ounces red kidney beans, rinsed and drained (8 oz. can)
1 cup stewed tomatoes, coarsely chopped and undrained
1 ½ ounces uncooked noodles (1 cup cooked)

Directions:
In a large saucepan, combine chicken broth, water, taco seasoning, garlic and parsley flakes. Add corn, peppers, onion, chicken, beans and undrained tomatoes. Mix well to combine. Bring mixture to a boil. Stir in uncooked noodles. Lower heat, cover and simmer for about 15 minutes or until vegetables and noodles are tender, stirring occasionally.

Ingredients:
1 Package Tofu Shirataki Fettuccine Shaped Tofu Noodles
1/2 Wedge The Laughing Cow Light Cheese
1 teaspoon Fat Free Sour Cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese
Salt & Pepper (if desired)

Directions:
Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste. Enjoy. Serves 1.

Cauliflower Fritters Recipe

Notes:
Perfect comfort food, low in calories and carbs.  You can make a heartier version by adding cooked tuna (Yuck) or crab plus an additional beaten egg white.  Make sure if you are doing points you add on any additional points.  This makes 8 fritters and the whole entire recipe is just 3 points, 1 fritter comes out to 0 points on the recipe trackers.

Servings: 8

Ingredients:
2 cups cooked cauliflower florets
1 egg white, beaten
1/4 cup green onion, minced
2 Tbsp parmesan cheese, grated
1/2 tsp onion powder
1/2 tsp black pepper
1/2 tsp salt

Directions:
In large mixing bowl, mash cooked cauliflower, add egg, onion, parmesan and spices.

Mix well and form 8 fritter patties.

Coat nonstick skillet with cooking spray and cook until golden brown on each side.

Fruit Salad Pudding Recipe

This is so good and always requested at pot lucks … nobody has a clue it’s good FOR you.

Servings: 10

Ingredients:
1 (8 oz.) Can Pineapple Tidbits, in juice
2 (11 oz.) Cans Mandarin Oranges, in light syrup (keep)
1 (20 oz.) Can Crushed Pineapple, in juice (keep)
1 (14.5 oz.) Can Cherries, in water
1 (8 oz.) Container Fat Free Cool Whip
1 Cup Fat Free Sour Cream
2 (1 oz.) Packages Sugar Free Instant White Chocolate Pudding Mix

Directions:
Drain all fruit, but keep the juice from the crushed pineapple and the mandarin oranges (place the juice into a medium bowl). Add the 2 packages of pudding to the juice and blend with a hand mixer until smooth. Stir in the sour cream and drained fruit. Fold in the cool whip. Refrigerate until ready to serve.

Serves: 10 (Approx. 1 Cup Each)
Per Serving: 176 Calories; trace Fat (0.6% calories from fat); 2g Protein; 42g Carbohydrate; 1g Dietary Fiber; 2mg Cholesterol; 281mg Sodium. Exchanges: 1 1/2 Fruit.

Baked Zucchini Chips Recipe

Football and Superbowl call for some incredible munchies.  This would be one of them.

Servings: 8

Ingredients:
2 Medium Zucchini (about 1 pound)
1/4 Cup Egg Substitute mixed with 2 Tablespoons Water
1/2 Cup Dry Italian Breadcrumbs
2 Tablespoons Reduced Fat Grated Parmesan Cheese
1/8 teaspoon Pepper

Directions:
Preheat oven to 475 degrees. Cut zucchini into 1/4 inch thick slices. Pour egg substitute mixed with water into a small bowl and set aside. Combine breadcrumbs, parmesan cheese and pepper in a small bowl and set aside. Dip zucchini into egg mixture then dredge through breadcrumb mixture and place on a baking sheet sprayed with nonstick cooking spray. Bake each side approx. 5-10 minutes or until brown and crispy. Divide evenly into 8 servings (this can best be done by weighing all of the zucchini chips, and then dividing by 8).

Serves: 8
