Porkskin Chicken Recipe

Notes:
Don’t let the name chase you off!  I absolutely hate porkrinds, but I gotta say, this is one of my favorite dishes!  Atkins/South Beach diet approved!  Simple and easy, great over a fresh salad, or by itself with a fresh serving of veggies!

Servings: 4

Ingredients:
(can be modified to fit your family needs)

4 Boneless, skinless chicken breasts
1 bag of Pork Rinds (I go with the organic kind because it comes MSG free)
1-2 Eggs

Directions:
Preheat oven to 350.
Ground Porkrinds with rolling pin, or your preferred method and pour into a ziplock type bag
beat eggs in a bowl
Dip chicken breasts in eggs, completely coat
Insert chicken one by one into the bag of ground porkrind, close and shake, completely cover
Set up chicken in preferred baking tray and cook about 30 min, or until cooked to liking
Enjoy!

Compromise Tofu Burger Recipe

Notes:
I call this the compromise burger because it is not completely meatless, but not a greasy patty of beef, either. Equal portions of tofu and lean ground beef are used to create satisfying volume for half the caloric cost. I recommend eating this burger without the traditional bun–it’s very soft and fluffy, prone to fall apart easily, but is also chock full of flavor on its own. Great for when you want the satisfaction of a hamburger without giving in to your diet! It does require some Asian ingredients, but they can all be obtained at Wegmans (in the Asian aisle).

Servings: 4-5 patties

Ingredients:
300 grams lean ground beef
1 pack (about 300 grams) of soft tofu (you know, those big tubs of tofu you see?)
200 mL of Panko (bread crumbs, usually available in the Asian section)
1/2 a medium sized onion, finely chopped
1 egg
1/2 a bouillon cube (preferable vegetable, but any is fine)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg

Directions:
1. Place the tofu in a large mixing bowl and begin mashing it up with a whisk. Continue until it's as close to a paste as you can get it.

2. Add the panko (bread crumbs) to the tofu and mix it up. Let the panko soak up the tofu's moisture. To give the panko time, start crushing the bouillon cube to a powdery state.

3. Add the ground beef, egg, salt, pepper, nutmeg, and bouillon powder to the tofu mix, and begin mixing it with your hand until well blended.

4. Finally, throw the onions in and mix it around lightly.

5. Split the mixture into about 4 or 5 patties. Rather than creating the traditional flat-squashed burger, make them more round and voluminous, so they don't break apart as easily.

6. Spread a small amount of your favorite oil (salad, olive) in a frypan and cook the burgers on high until both sides have a nice brown color. Don't worry about cooking them all the way through yet.

7. Once both sides are browned, add enough water to cover the bottom of the frypan (about 100mL for my pan), cover the pan and turn the heat down to medium.

8. After letting it steam for a couple minutes, take the cover off and check by breaking a small piece off of one of the hamburgers. If the whitish-pinkish color is consistent all the way through, then it is done. If not, then steam it longer.

9. Turn the heat back on high one last time and evaporate most of the water. You can put the hamburgers on a plate now~!

Stevia Lemonade Recipe

Notes:
Today I tried making this for the first time and I was surprised at how good it tastes.  I was really sick of drinking only water and unsweetened ice tea.  I think that too much stevia is bad for you also it doesn’t seem to go with ice tea as well as it does with lemonade.  For anyone who loves lemonade but doesn’t want the sugar, and thinks most artificial sweetners are bad for you I highly recommend this.

Ingredients:
Lemon juice, Stevia powder, water

Directions:
Squeeze lemons, add Stevia powder to taste (Stevia is much much sweeter than sugar, i used about 1 teaspoon of stevia powder to make a3/4 gallon jug of lemonade) Add water, stir or shake..drink guiltlessly!

Tastes like mashed potatoes but without all the carbs! what more could you ask for? lol even if you HATE culiflower just try it. you will be surprised. whats life without trying new things?

Servings: 4-6

Ingredients:
2 10oz pkgs frozen cauliflower (or fresh 3/4 head)
1 tsp chicken boullion granules
1/4 tsp white pepper
1 tsp minced onion flakes (optional)
2 Tbsp butter
2 Tbsp heavy cream

Directions:
Preheat oven to 375°F. Cook cauliflower in microwave or on stovetop until it is VERY done . Drain thoroughly and mix cauliflower with all ingredients except cream. Mixing with mixer will give "lumpier" results than a food processor. Add cream slowly and mix again. (You must be careful adding liquid. If you add too much, you are in for trouble. Your dish may take a tiny bit more or less than the called for amount of cream.)

Spray an ovenproof dish with cooking spray and put mixture in. Add butter or margarine on top if you like buttery potatos. Bake 15 - 20 minutes until hot.

try it - you'll be hard pressed to tell it from mashed potatoes - it does not taste like cauliflower.

Makes 4-6 Servings. 5-7 net grams of carbohydrate per serving.

Cauliflower Salad Recipe

Notes:
This salad is also great made with bright green broccoflor, a hybrid of cauliflower and broccoli. For variety, add sliced hardboiled eggs or different spices!

Servings: 6

Ingredients:
– 1 medium head cauliflower, broken into small florets
– 1/4 cup mayonnaise
– 2 tablespoons lemon juice
– 1/2 teaspoon dried mustard
– 3 green onions, chopped
– 2 tablespoons chopped green bell pepper
– Salt and pepper

Directions:
1. Cook cauliflower in a large pot of boiling salted water 10 minutes, until tender. Drain and rinse under cold water; pat dry.
2. In a large mixing bowl, mix mayonnaise, lemon juice and mustard. Add cauliflower, green onion and pepper, if using. Mix well until vegetables are evenly coated with dressing. Add salt and pepper to taste.
3. Chill 30 minutes for flavors to blend.

Chicken Salad W/Lettuce Wraps Recipe

Notes:
Great use for leftover chicken. The grocery store rotisserie chicken works great for this !

Be creative and add your own additions with what you have on hand. Just keep track of the carbs you are adding in.

Servings: depends

Ingredients:
~Leftover chicken. Chopped or shredded. (Canned chicken also works)
~Mayo (add a little salt, pepper, and garlic powder to taste)
~Onions. Chopped.
~Green onions. Sliced small.
~Celery. Chopped small.
~small Dill pickle. Chopped.
~Pecans. Roughly chopped. (Sliced or slivered Almonds is also yummy)
~Large leaf lettuce (Romaine, Green leaf, Red leaf,etc.)

+(My husband also likes chopped black olives and cheese added to his mixture. Be adventurous !)

Directions:
Mix chicken, mayo & seasonings with your additional ingredients.
The amount of chicken meat you have to use will determine the amount of goodies you add in. I use a little of each item. The celery and dill pickle are for texture. The green onions will give it a wonderful flavor. I like onions, so I add chopped yellow onions for flavor and texture (that can be up to you).
The pecans are a wonderful touch! It adds a sense of richness and makes you feel like you must be cheating! Great for texture and flavor.

~Mix all ingredients together and put in refrigerator for a while, to let all the flavors meld.
~When you are ready, take your bunch of lettuce and pull off full leaves. Take a couple of scoops of chicken salad and place in middle of leaf. Fold up the end of the lettuce, fold over the sides (it should look like a skinny burrito), and viola! -Yummy Goodness.

Stuffed Jalepenos Recipe

Notes:
For this recipe you will need four to six large fresh Jalepenos, one block of cream cheese, and 2-3 slices of bacon.  Toothpicks will be used as well. 

Servings: 2-6

Ingredients:
4-6 large Fresh Jalepenos
1 pkg cream cheese
2-3 slices bacon

Directions:
Cut the jalepenos length wise and remove the membranes. If you want a spicier pepper, leave some membrane as this is the hottest part of the pepper. Be careful not to touch your eyes!!! Take a spoonful of cream cheese and stuff the jalepeno halves. Cut the bacon slices in half and wrap around the pepper, secure with a toothpick. Put these on the grill for 20-30 minutes. This makes a wonderful snack or side dish!

1tps goya adobo
dash of black pepper1 sazon goya
2 tbs goya sofrito
1/2 can tomato sauce
6 big olives chopped
1/2 c raisins
1 cup dice potatoes
1/4 c goya cooking win
3 bay leaves

Directions:
brown meat
add dry condiments
add rest of ingredients
cook for 30 mins or until potatoes are soft
add water if you like more sauce
