Banana Bread Recipe
Notes:
I found this recipe on Allrecipes.com when I was out of eggs but craving banana bread. It makes a deliciously moist bread and my family eats it up! I’m not sure how healthy it is in terms of calories, etc. But I had to share it cuz it is yummy!!
Servings: 10
Ingredients:
1/2 cup shortening
1 cup white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas
Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8×4 inch loaf pan.
2. In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
3. Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.
**Some people have added 3/4 cup of milk to the recipe but I have found the recipe above makes for a soft, yummy bread. And no eggs required!
***Substitute applesauce for the shortening to make it even healthier.
