Baked Hawaiian Sweet and Sour Chicken Recipe

Yummy low fat Baked chicken with awesome sauce, serve with white rice and french cut green beans for a complete meal.
Servings: 6-8
Ingredients:
2 pounds boneless skinless chicken breast cutlets
1 cup pineapple chunks, drained and juice reserved
1 tsp ginger
1 Tbsp cornstarch
3/4 c light brown sugar
3/4 c pineapple juice
1/3 c vinegar
2 Tbsp soy sauce (you can use low sodium too)
3 tsp salt, divided
1/4 tsp pepper
1 1/2 tsp paprika
1 c flour
"Spray butter" like I can't Believe it's Not Butter
Directions:
In clean/unused grocery store paper bag combine flour, 2 tsp salt, pepper and paprika. close bag and shake ingredients together. Using paper towels pat chicken cutlets add to paper bag. Shake to coat chicken. Spray bottom of 10x 13" baking dish with spray butter to coat, place chicken in dish, spray tops of chicken with spray butter. Bake in 400 degree oven. While chicken cooks prepare sauce. In saucepan mix together ginger, remaining salt, cornstarch and brown sugar. Add pineapple juice, pineapple chunks, vinegar and soy sauce, mix well. Cook over medium heat, stir constantly until slightly thickened. Take chicken out of oven, reduce heat to 350 degrees, pour sauce over chicken. Return chicken to oven and cook for 30 more minutes or until cooked through.
