Skillet Chops and Rice Recipe

Notes:
Good easy, main dish! 375 calories a serving!

Servings: 4

Ingredients:
4 6 oz center cut pork chops ( 1/2 inch thick)
cooking spray
1 1/2 cuos 5 minute rice, uncooked
2/3 cup water
1/2 cup chopped onion
1/4 teaspoon pepper
1 14 1/2 oz can italian style stewed tomatoes, chopped
1 8 oz can of tomato sauce

Directions:
Trim fat off of chops. Coat a large non stick skillet with cooking spray, and place over medium- high heat until hot. Add chops, and cook for 2 minutes on each side. Remove from skillet and set aside.
Combine rice and remaining 5 ingredients in skillet, and bring to a boil. Arrange chops over rice mixture. Cover, reduce heat, and cook 5 minutes or until liquid is absorbed and rice is done.

Jillian’s Fish Broil Recipe

Notes:
Got this off the Biggest Loser, very lowcal and easy, and tastes great!

Servings: 4

Ingredients:
1 half cup chopped onion or scallions
1 cup chopped tomato
Plenty of chopped fresh parsley( didn't have fresh so I used dehydrated and it worked fine)
4 tilapia fillets

Directions:
Place tilapia fillets on broiler pan and broil for 5 minutes on each side.
While fish cooks, coat frying pan with a spray of Pam(I used olive oil flavored).
Saute onions tomatoes and parsley until onions are tender( I also added garlic, salt and pepper and lemon juice, and squeezed lemon juice over the fish before broiling)
Top fish with tomato mixture and serve

Mexican Steak Recipe Recipe

Notes:
This is very good, made it tonite. I didn’t have the tomato sauce, so I used chunky salsa intead! Very easy to make!

Servings: 4

Ingredients:
1 pound round steak
1 tablespoon vegetable oil
1 onion, chopped
1 can Mexican-style chunky tomato sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/3 cup sour cream

Directions:
Cut beef into 1 1/2 x 1/2 inch strips.
Heat oil in 10 inch skillet over medium high heat.
Cook beef and onion in oil, stirring occasionally, until beef is brown.
Stir in tomato sauce, chili powder and cumin.
Heat to boiling,. Reduce heat to low.
Cover and simmer about 15 minutes or until beef is tender.
Top with sour cream.

CURRY DISH! Recipe

Notes:
This was made on the spur of the moment. It was enjoyable.
1/4 of this recipe should be about 7 points on weight watchers. Yes this includes the sauce.

Servings: 12-24

Ingredients:
1.5 lb skinless chicken breast
1 box whole wheat spaghetti
non stick cooking spray
yoshidas marinade and cooking sauce( I can only find this at Sam's club, but other grocery stores may have it) 5 tbsp
Pepper grinder:Twist over chicken
salt grinder: twist over chicken
Bag of veggies that you would like to have in an oriental food.

Directions:
Heat up water for pasta.
Place chicken in pan coated in non stick spray and heated.( Use Medium Heat) As chicken is cooking cut it up with the spatula. add salt and pepper
(you may want to dice chicken before cooking, but this is what we like to do); once chicken is looking like it is cooked add the terriaki sauce; 3tbsp and mix in and cook until done

While chicken is cooking you can make your spaghetti as directed.
Cook your veggies as you prefer in a low fat or no fat method.
Chicken done: move pan over and cover.
Pasta done: drain, rinse with tepid water and place into pan with chicken. Mix chicken and pasta well; add veggies; mix well; stir in remaining Yoshidas sauce.
Enjoy!
My family loved this and I just threw it together. Low cal alternative to Japanese or Chinese. Kids had theirs without the veggies.

I am going to continue to experiment in the kitchen. I will post any updates
