Arugula Salad with Tomatoe & Cucumber Juice Recipe

This tastes great with the Ginger Mustard Chicken!
Servings: 4
Ingredients:
3 bunches arugula, well washed, dried, and torn into bite-size pieces
1 cucumber, peeled, seeded, and pureed, or 1⁄2 cup cucumber juice
1 tablespoon rice vinegar
Juice of 1⁄2 lemon
2 beefsteak tomatoes, finely minced
1 red onion, finely minced
4 garlic cloves, finely minced
1 tablespoon chopped fresh rosemary leaves, or 1 teaspoon dried rosemary
1 tablespoon chopped fresh basil leaves or
1 teaspoon dried basil
1 teaspoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
1 teaspoon kosher salt
1⁄2 teaspoon black pepper
Directions:
1. Place the arugula in a large serving bowl.
2. To make the dressing: Combine the cucumber juice, vinegar, lemon juice, tomatoes, onion, garlic, rosemary, basil, thyme, mustard, salt, and pepper in a small bowl. Mix well and pour over the arugula. Toss and serve immediately.
